UTILIZATION

The spicy fillet eggplants are handcrafted according to the ancient Sicilian peasant custom with all natural, fresh and first choice ingredients, without the addition of preservatives. This typical product, with a homemade flavor, is excellent both as an appetizer and as an accompaniment to a dish of boiled meat, and as a second course.

PROCESSING

The eggplants are washed manually or in the vegetable washing machine, then they are, first sliced, then cut into strips and finally cooked in vinegar, Finally we move on to the seasoning of the eggplants with the rest of the ingredients. Then we move on to filling the jars manually. The jars, after the addition of oil, are corked and pasteurized.
