UTILIZATION

A perfect match for delicious dishes and never taken for granted. Used alone as an appetizer, combined as a side dish for second courses of meat and fish, it is also excellent for flavoring green salads, rice and cold pasta.

PROCESSING

The artichokes grown mainly in hilly terrain, are initially selected directly in the open field. The processing takes place on the same day as the cut from the plant as it keeps the flavor and scent of this vegetable preserved and intact. The most tender buds in the maximum size of 50 millimeters in diameter, after being thoroughly washed, are cooked in water and vinegar to be defoliated. Then we move on to the seasoning of the artichokes with the rest of the ingredients. Subsequently, manual filling takes place in glass jars, filling with oil, manual closure with sterile capsules and pasteurization of the product.
