Appetizing and with an intense and aromatic flavor, they must be rinsed thoroughly before using them. Try them on croutons of bread or as an aperitif.
They are salted as soon as they are harvested because the cucunci have an extremely bitter taste. At this point they are placed inside a glass container and salt is poured.
