HOW TO EAT BOTTARGA
The most used and well-known method of eating bottarga is to grate it on dishes. A bit like you do with cheese. Many people, however, prefer to consume it by cutting it into very thin slices, seasoning it only with a teaspoon of extra virgin olive oil and served on croutons of bread.
The bottarga lends itself very well both to enrich fish dishes and to be consumed alone. It is excellent for enriching appetizers (such as carpaccio and seafood salads), first courses (risotto with cuttlefish ink, spaghetti with seafood etc.) and second courses (as an accompaniment to red mullet, prawns etc.). There are many recipes in which you can use the bottarga. One of the most popular and well-known is that of spaghetti with bottarga.
