UTILIZATION

Typical Sicilian condiment to season first courses

PROCESSING

Eggplants and onions are washed manually or in the vegetable washing machine, after that they are, first sliced and then cut into cubes and strips respectively. Subsequently, the eggplants and onions are fried and then immersed in the sauce of our production with the rest of the ingredients. After cooking everything is, still hot, put inside the glass jars, in which two plated eggplant leaves are manually added. Hand closure. Pasteurization
